Online Lesson Guide

This guide provides information about the tools and materials used in online lessons, as well as the lesson flow, to ensure you can participate with confidence. Please prepare these items, as they will be necessary for you to easily recreate the items yourself in the future.

Meet The Team

Raw cocoa powder

You can purchase it from Rakuten, Amazon, iharb, etc.

Raw Cocoa Butter

You can purchase it from Rakuten, Amazon, iharb, etc.

maple syrup

[Maple syrup]

Choose organic products. You can buy them from Rakuten, Amazon, Costco, and other supermarkets.

Spatula with thermometer

[Tempering spatula]

We recommend using one that comes with a thermometer. You can also use the spatula and thermometer separately, but this will ensure you make the dough without any problems. You can also purchase it on Rakuten.

Mold

[Mold]

Silicone ones, which can be found at 100 yen shops, are fine too. There are many different types, so choose the one you like best.

Dates

Choose organic products. You can buy them at Rakuten, Costco, etc.

Lina Blue

Recommended as a coloring material

Any blender will do, but the school recommends the Blendtec high-speed blender.

Food dryer

[Food Dehydrator]

You don't necessarily need one at first, but it's convenient for making things like nuts and dried fruit. The school uses a Princess brand food dehydrator.

We will be using Zoom, so please be prepared to play the video on a tablet or PC.

Start prepping together, measuring out ingredients, preparing pots, bowls, toppings, etc.

[Basic white chocolate]

Use a food processor or blender.

You can use the same mold you used for making basic dark chocolate.

Finish with cacao or matcha. No mold is required. Just prepare a tray or similar.

You will learn about tempering and cacao while looking at the textbook we will send you.

It is poured into molds or trays or applied to fruit.

[Colorful Chocolate]

Color white chocolate with colors like pink pitaya, Lina Blue, maqui berry, spirulina, matcha, etc. You can use your favorite mold or a tray.

Finished with cocoa or matcha. No molds are needed. Please prepare a tray or similar container.
